4-Ingredient Lentil Patties
Super simple yet full of flavor, these lentil patties are perfect for kids and adults alike!
Ingredients
- 1 can brown lentils, drained and rinsed 400g/15oz
- 2 tbs tomato paste
- 1 tbs lemon juice juice from 1/2 a lemon
- 1/2 cup breadcrumbs
- 1/4 tsp salt (optional, omit for babies under 1)
Instructions
- Add the lentils, tomato paste, lemon juice, and salt (if using) to a bowl and mix thoroughly. I also like using an immersion blender as it easily blends the mixture up into a paste, however you can also smash it up with a spoon, potato masher, or your hands.
- Add the breadcrumbs to the mixture and mix thoroughly, I find that this works best by mixing with your hands. Then form into palm-sized patties.
- Heat 2tbs of oil in a non-stick skillet and fry the patties on each side for about 3 minutes each, until they are browned and caramelized.
- These patties stay good in the fridge for up to 4 days and freeze for up to 6 months. When defrosting, simply reheat on the stove or in the microwave.
