Ingredients
Salad Ingredients
- 3 cans black beans, rinsed & drained 4.5 cups cooked
- 1 can corn, rinsed & drained 8oz/400g
- 1 red pepper, minced
- 4 green onions, sliced
- 3/4 cup cilantro, chopped (a large handful)
- 3 avocados, cubed
Dressing Ingredients
- 1/3 cup olive oil 80ml
- 2 cloves garlic, minced or pressed
- lime zest from 1 lime
- 6 tbs lime juice (from about 3 limes, zest one of them before juicing)
- 1.5 tsp cumin
- 1/4 tsp cayenne pepper
- 2 tsp salt
Instructions
- Make the dressing: Add all ingredients to a small jar or bowl. Stir well to combine. If using a jar, put the lid on and give it a good shake.
- To a large bowl, add the black beans, corn, red pepper, green onions. Then add the avocados and the dressing. Mix well to combine. Cover and let marinate in the fridge for at least two hours but ideally overnight. It tastes best the next day!
- Enjoy as a side dish, on it´s own, or with chips, rice, quinoa, or toast for a complete meal.
