This Black Bean Salad comes fully-loaded with creamy avocado, sweet corn, crunchy red pepper, and fresh cilantro-lime dressing to tie it all together. It always gets rave reviews at get-togethers and is also perfect to keep in the fridge as a main meal as it provides protein, healthy fats, and veggies! A versatile and easy dish that is perfect for all occasions.

Black Bean Salad

This Black Bean salad come fully-loaded with creamy avocado, sweet corn, crunchy red pepper, and fresh cilantro-lime dressing to tie it all together. Ingredients

Salad Ingredients

  • 3 cans black beans, rinsed & drained 4.5 cups cooked
  • 1 can corn, rinsed & drained 8oz/400g
  • 1 red pepper, minced
  • 4 green onions, sliced
  • 3/4 cup cilantro, chopped (a large handful)
  • 3 avocados, cubed

Dressing Ingredients

  • 1/3 cup olive oil 80ml
  • 2 cloves garlic, minced or pressed
  • lime zest from 1 lime
  • 6 tbs lime juice (from about 3 limes, zest one of them before juicing)
  • 1.5 tsp cumin
  • 1/4 tsp cayenne pepper
  • 2 tsp salt

Instructions

  • Make the dressing: Add all ingredients to a small jar or bowl. Stir well to combine. If using a jar, put the lid on and give it a good shake.
  • To a large bowl, add the black beans, corn, red pepper, green onions. Then add the avocados and the dressing. Mix well to combine. Cover and let marinate in the fridge for at least two hours but ideally overnight. It tastes best the next day!
  • Enjoy as a side dish, on it´s own, or with chips, rice, quinoa, or toast for a complete meal.
