Level-up the protein content of your avocado toast by adding some tangy beans and seeds! This is a great breakfast, lunch, or snack that you can quickly whip up and enjoy in just 5 minutes.
Smashed Bean and Avocado Toast
A tangy bean spread levels up the flavor and protein content of a simple avocado toast!
Servings: 2 slices
Ingredients
- 2 slices whole grain or seeded bread (or any other kind of bread that you like)
- 1/2 can white beans or chickpeas (drained and rinsed) (200g/8oz)
- 1/2 avocado
- 1 tbs white vinegar
- 2 tsp lemon juice
- pinch salt
- pinch black pepper
- sprinkle chili flake
- sprinkle sesame seeds
Instructions
- Toast the bread in a toaster. Add the beans, vinegar, salt, and pepper to a bowl and mash together with a fork until it forms a spreadable paste. Spread on top of both pieces of toast.
- To a bowl add the avocado, lemon juice, salt and pepper. Mash together and spread on top of the bean mixture.
- On top, sprinkle any seeds that you have on hand (I used sesame seeds) Sprinkle withas much chili flake as you like, this really adds a lot of flavor. Top with chopped cilantro if you have any on hand.
