Smashed Bean and Avocado Toast

A tangy bean spread levels up the flavor and protein content of a simple avocado toast!

Ingredients

  • 2 slices whole grain or seeded bread (or any other kind of bread that you like)
  • 1/2 can white beans or chickpeas (drained and rinsed) (200g/8oz)
  • 1/2 avocado
  • 1 tbs white vinegar
  • 2 tsp lemon juice
  • pinch salt
  • pinch black pepper
  • sprinkle chili flake
  • sprinkle sesame seeds

Instructions

  • Toast the bread in a toaster. Add the beans, vinegar, salt, and pepper to a bowl and mash together with a fork until it forms a spreadable paste. Spread on top of both pieces of toast.
  • To a bowl add the avocado, lemon juice, salt and pepper. Mash together and spread on top of the bean mixture.
  • On top, sprinkle any seeds that you have on hand (I used sesame seeds) Sprinkle withas much chili flake as you like, this really adds a lot of flavor. Top with chopped cilantro if you have any on hand.
