Smashed Bean and Avocado Toast
A tangy bean spread levels up the flavor and protein content of a simple avocado toast!

Servings: 2 slices
- 2 slices whole grain or seeded bread (or any other kind of bread that you like)
- 1/2 can white beans or chickpeas (drained and rinsed) (200g/8oz)
- 1/2 avocado
- 1 tbs white vinegar
- 2 tsp lemon juice
- pinch salt
- pinch black pepper
- sprinkle chili flake
- sprinkle sesame seeds
Toast the bread in a toaster. Add the beans, vinegar, salt, and pepper to a bowl and mash together with a fork until it forms a spreadable paste. Spread on top of both pieces of toast.
To a bowl add the avocado, lemon juice, salt and pepper. Mash together and spread on top of the bean mixture.
On top, sprinkle any seeds that you have on hand (I used sesame seeds) Sprinkle withas much chili flake as you like, this really adds a lot of flavor. Top with chopped cilantro if you have any on hand.
