Apple Cinnamon Bread

Fresh apple, warm fall spices, whole grains and walnuts!

Ingredients

  • 1 apple, peeled and chopped in small cubes (about 1.5 cups) See Note 1
  • 1 cup plant-based milk See Note 2
  • ¼ cup neutral oil (I use sunflower) can sub ¼ cup applesauce (See Note 3)
  • ½ cup coconut sugar can sub 1/3 cup packed brown sugar
  • 1 tsp vanilla extract
  • 2 cups whole-wheat flour (260g)
  • 1.5 tsp cinnamon
  • ¼ tsp nutmeg
  • ½ tsp salt
  • 1 tsp baking powder

Topping

  • 3/4 cup walnuts, roughly chopped
  • 1 tbs coconut sugar can sub brown sugar

Instructions

  • Preheat the oven to 350°F/180°C. Line a loaf pan with parchment paper.
  • In a large bowl, add the whole wheat flour, cinnamon, nutmeg, salt, and baking powder
  • In a small bowl, mix together the plant based milk, oil, coconut sugar, & vanilla. Add to the large bowl with the dry ingredients and mix well
  • Stir in the apples and transfer to a prepared loaf pan. I ike to use a strip of parchment paper to prevent sticking. If not using parchment paper be sure that you pan is greased and floured.
  • Bake for 40-50 minutes, until a toothpick comes out clean.
  • Remove from pan and allow to finish cooling on a wire-rack for 30 minutes. Then enjoy a nice warm piece!
  • Store in an airtight container on the counter for 3-4 days. Freeze for long-term storage.

Notes

Note 1: Any kind of apple will do for this recipe! My favorite is with a green apple as the slight tartness pairs balances perfectly with the sweetness of the bread.  I have also used gala apples and they work well in this recipe.  If you use a softer apple it may not hold its shape as well but it will still be delicious.
Note 2: I have only tried this with soy or almond milk, it works with both sweetened and unsweetened versions.  However, I would encourage using whatever kind of plant-based milk you have on hand!
Note 3:  I have tried this recipe subbing applesauce for oil and it works well! It does change the texture to be a little more moist.  If I have to choose though, I would go for the oil version :)
