Quick Quesadillas

Ingredients

  • 1 pack flour tortillas
  • 1 can red or black beans
  • 200 g tofu or plant-based chicken, crumbled or finely chopped (optional, for added protein)
  • 2 tsp taco seasoning could also use a combo of chili powder and cumin
  • 2 tbs salsa
  • 1 tbs water add more if the mixture is too thick

Instructions

  • To a medium sized bowl, add the beans and mash with a fork. Then add the rest of the ingredients and stir to combine well.
  • On one side of the tortillas, spread the mixture evenly. Then fold over the other side to make a quesadilla.
  • Heat a skillet on medium-high heat and add the tortillas. Allow to cook for 3-4 minutes until browned and then flip to cook evenly on the other side. Enjoy with a side of salsa, avocado or guacamole!
